One of the hardest parts of going vegan was not having all those yummy, creamy, (bad for you), cheesy treats. I knew that it would be hard to get my husband to go vegan if he couldn't still enjoy many of the same meals that he was used to. One of those was pasta with alfredo sauce. I made up my mind that I would make something that we could still enjoy and not feel so guilty about. As an added bonus, it is super easy! It's almost as easy as opening a jar of the other stuff.
Now, just because this is vegan doesn't mean that it is necessarily good for you or that you can eat as much as you want. Because of some of the ingredients, you still want to take it easy and only have it once in a while. (It's bound to have much less calories than regular alfredo.) Boy does it make great comfort food, though!
1.) Divide your tofu. Place half in the blender and half in another container filled with cold water. That will stay good in the fridge for a few days as long as you continue to replace the water daily.
2.) Place all of your ingredients in the blender and blend on low until it has a smooth and saucy consistency.
3.) Transfer the mixture to a medium saucepan and heat on a medium setting while stirring slowly. Once it is warm, taste and adjust the seasonings to your preference.
4.) Add to cooked pasta of your choice, along with some candle light, a bit of opera, and enjoy!

- 1/4 cup Imitation Cream Cheese
- 3/4 cup Milk alternative such as Almond, Soy, or Cashew, etc.
- 1/2 teaspoon Sea Salt
- 2 Tablespoons Yeast Flakes (Nutritional Yeast) {I order the big one from Amazon!}
- 1/4 t. Garlic (minced or crushed)
